Saber A Café Steakhouse & Live Music Venue in Niles will likely have a soft opening later this month with a grand opening on Saturday, Nov. 9, owners told Journal & Topics.
Elio Elaes, who owns Sabor with his wife Martha, said the store’s hours are 5 p.m. to 10 p.m. on weekdays, 5 p.m. to midnight on Fridays, and 5 p.m. to 2 a.m. on Saturdays and Sundays. Until then.
This is Elaesu’s second store. Sabor a Cafe Columbian Steakhouse has been open on Peterson Avenue just west of Western Avenue in Chicago for 25 years.
Sabor’s Chicago location focuses on Colombian cuisine, while the Niles location offers a broader selection of Latin American cuisine.
Niles Mayor George Alpogiannis said he ate at Saber’s Chicago location without telling anyone who he was or that he was coming, and said he was impressed by the experience.
Arpogiannis has been working to revitalize the village in what he calls the “Niles Renaissance,” in which restaurants and the arts play a big role.
“As we work on our 2024 Comprehensive Plan, 68% of Americans said they need more go-to restaurants,” Alpogiannis said. “This is our 'renaissance.' Food, music and art bring people together, and we bring both music and food together.”
Marina Samovsky, chairwoman of the Niles Public Arts and Culture Advisory Committee, said she has been in contact with Ellaes.
Another signature restaurant coming to Niles is Koukal’s, located at Howard Street and Milwaukee Avenue, from award-winning chef father-son chef Jimmy Vanos Jr. and Sr.
